Construction underway on new eatery in town

A pizza restaurant and coffee shop is coming to Vashon town, according to documents from the King County Department of Permitting, but an opening date is not yet known.

Construction has begun inside the building at 17607 Vashon Hwy., between Sporty’s and The Hardware Store Restaurant. Paper is clinging to the windows, and workers can be heard banging at walls and floors on most weekday mornings. Last week, an application from Public Health — Seattle & King County for a permit to operate a food establishment appeared in a window.

Public Health documents obtained by The Beachcomber show the eatery’s name is Vashon Vita, and Public Health spokeswoman Hilary Karasz said the application for the remodel to an eatery has been approved.

Meanwhile, a list of permits issued by the county permitting office in May show a permit was issued to islander and Caffe Vita owner Michael McConnell for the building on May 25. The permit approves changing the building from a liquor retail space — Vashon’s liquor store used to be located there — to “two tenant spaces as pizza restaurant and coffee shop.”

The Beachcomber’s attempts to contact McConnell were unsuccessful.

The building’s owner is listed in King County Assessor’s records as 17607 Vashon Hwy. LLC, and Secretary of State records show Jim Johnston, a Newcastle attorney, is the agent. Reached last week, he declined to comment, saying that it was still too early in the process.

“When it’s time, someone will be in touch,” he said.
